Looks like a good recipe. But honey isn’t vegan, so you might want to update it to use golden syrup or maple syrup or something else instead.

I absolutely love this, it’s SO delicious and super easy! Annoyingly tonight I didn’t have any soy sauce in after halfway through making (despite having about every other condiment in existence) so subbed veggie oyster sauce and a sprinkle of salt and it was still delicious – albeit not as good as the original! Even my 9 month old enjoyed the noodles and buttery aubergines.

I made these with leftover rice and some old/dry normal cheese + feta, and a bit of fresh rosemary. They didn’t hold together so well at first (but I maybe should’ve left them in the fridge longer) but with patience and baking in the pan I made pretty perfect delicious patties! Thank you :)

This is truly delicious! I had hoped to keep some chickpeas and mushrooms aside to make this again for lunch tomorrow but couldnt! I ate it all :-)
