Annoyingly tonight I didn’t have any soy sauce in after halfway through making (despite having about every other condiment in existence) so subbed veggie oyster sauce and a sprinkle of salt and it was still delicious – albeit not as good as the original! Even my 9 month old enjoyed the noodles and buttery aubergines.

I meant the ingredients. I copied them to go shopping and realised later that I forgot to buy the noodles. Luckily, I had them in my cupboard. Phew!
