Thank you for this great reminder and the idea of skipping the bread mixed into the Gazpacho. We prefer the crunch on top instead of the heavy creaminess caused by the mixed bread. We added a handful of cilantro and some toasted cumin seeds, served it with harissa yogurt and lime.

Best Gazpacho ever, and so easy! I added chopped cucumbers and avocado as I put into bowls and used coconut-based unsweetened yogurt instead of sour cream to make it dairy-free. Delicious! Thanks!

But seriously, the heady aroma of toasting sourdough with garlic (and feel free to add dried or fresh chopped basil or oregano…) is just heavenly for basically any soup or scrambled eggs for that matter.

But thank you for a reminder of this classic amazingly healthy miracle of nature.
