In your list of March favorites, you mentioned David made raw carrot cake bars, which sound right up my alley, but I haven’t managed to find the recipe. Has it been posted yet? Tack så mycket and keep up the great work!

I make a small modification – I cook the smashed blueberries in a pan for 1 minute so that they get a “jammy” structure.

I tested out while the kids weren’t around and can’t wait to make it with them. My blueberries didn’t provide as much liquid and color as yours, so I tossed them into the blender for a few spins to ensure I had as much liquid. This was so good and I can imagine this structure working in many different ways. I hope the kids like it! Thank you as always for the inspiration.

I really love this recipe. I like the fact that we can substitute wild blueberries with other berries (which in fact, I tried for once…with huckleberries). It actually turned out good but I prefer the ones with blueberries in it. It was so satisfying! Can’t wait to make some again with my kids!

I think that might’ve been the problem. I will experiment! thx

However, I made it a few days ago, with coconut milk and it gelled up beautifully! Everything else was the same — i wonder why it didn’t work this morning? Is there something about cashew milk? The cashew milk was a commercial brand called Malk, which contains only salt, water and cashews. It’s a mystery…..

I used thinly sliced apples instead of bananas, and no yogurt (but everything else) on top.

Thanks for the recipe!

I was going to ask the same question, about not using bananas, so thanks for piping up! I will try some thinly sliced apples sauteed in the brittle. Looks lovely.

So, instead of blueberries, I have used raspberries, replaced the banana with an apple cut into cubes and cooked with a cinammon stick, and the greek yoghurt with a (soya) yofu. Heaven!! Cannot wait to try again as per the original version too, though. But I’ll be skipping the chocolate part again, as it does not appeal to me as much ;-) Thanks a lot! Vera
